    Thin Italian

    Unlike me,I whipped up some thin italian sausage with fresh asiago, fennel seed and italian parsley. Working with sheep casing is always an exercise in patience.

      I remember the guys making merguez for their first time…. Lots of blowouts! But once they got the hang of it…..

          Editing a comment
          I make pinwheels out of them using bamboo skewers, and grill them. The combination of the thinness, and the asiago allows them to crisp a bit.
