Good day BBQ heads I have been thinking about vacuum tumbling and then grinding, and stuffing snack sticks. Would that improve the seasoning distribution or would it be the same, the salt goes deep would all the other ingredients go deeper any thoughts from you smart folks thanks Papa Bob 😎😎😎

I wish Backroadmeats was still a member. He owns several tumblers including one that could hold 300 lbs. He stated that the tumbler with its gentle rotation and paddles appeared to open the pores allowing deep penetration. He is a commercial butcher and loved his. Meathead raised the question as to whether the vacuum would instead draw moisture from the meat, but Backroadmeats was pretty adamant that it did not. Wish I could be more help. Maybe a search for vacuum in a post by Backroadmeats could lead you to more information.
