    Well I just finished casing up my bratwurst.


    I have this much to say about it...

    F*** sheep casings.

    Never again. I just threw away the rest of my $50 package of sheep casings and I will NEVER buy them again. So many damned blowouts. Soooo many. Screw those things.

    If I want to do any smaller sized sausages again, I'll buy collagen casings or something. Pre-tubed. Damn.

      Just another quick update. Bratwurst dried out the casings in the fridge overnight, snipped apart and in the freezer now to par-freeze before putting in vac seal bags and sealing up. So they don't squish into flat-ended unattractive looking sausages.

      Had 10 3/4lbs cased. Almost 3lbs in that bag. Between what was left in the bottom of the stuffer, and what I had accumulated from blowouts. And that was only the last 20 minutes of stuffing. I had already reloaded an easy 2-3 pounds from blowouts previously. I was just sick of messing with those stupid sheep casings by then.

      Have some collagen casings from the Bearded Butchers arriving today, and the Walton's pre-tubed hog casings coming hopefully later in the week to do the rest of this meat I have. I do have a few hog casings left, I may tube up the pork kielbasa this evening or something. We'll see.
