My mother used to make something similar when I was a kid. Basically, you slit a hot dog, stuffed it with cheese, then wrapped it in bacon, secured with a toothpick. Her version was broiled, and I still make it that way. In college, folks viewed it as a miracle.

I’ve done them, too. But my instinct for simplicity leads me to just grilling dogs, adding bacon, and melting cheese over top. It’s easier, and the dogs get a nice grill to them.
ETA: That sauce, with the pickled mustard seeds, looks like it would taste fantastic!
