      Funny, I'm slow cookin some red beans and rice in the morning with my andouille​. Savoie's​ that is. It's a Louisiana staple.

      I vote for all of the above. Or just cook them up and put them on a hotdog bun! Just saying! Think of it like a spicy cajun bratwurst...

          If yo’u want a New Orleans style the above mentioned Gumbo, Red Beans and Jambalaya would be first choice. You also might pick up some great ideas at this local grocers site https://www.rouses.com/cooking/recipes/

              So many good choices listed here. What else do you have on hand in terms of proteins? If you have some chicken thighs or legs, I'd probably vote for a nice gumbo, and if you have shrimp, throw em in!

                Thanks for all the suggestions! Funny thing is, I made shrimp and grits yesterday. Looks like red beans and sausage today!

                  Late to the party as usual…. White bean soup with smoked sausage and collard greens. On the winter list.

                  Next weekend, making and smoking Andouille sausage and using in a seafood gumbo. Unless the fire changes our itinerary.

                    This sounds delicious! I love a white bean soup. One of my favorites being Senate bean soup. Been perusing the Ranch Gordo site and will place my first order this week.
