I like that water pan and steaming! I have a ceramic top griddle, but those pans can go on any heat source. I will also say, though, that charred over coals is my preferred hod dog. The griddle works, but I’ll take mine over coals every time.

When I’m cooking for a crowd I steam every time. It’s so fast. When it’s just a package of dogs for the fam and a few guests, griddle only. I’m a huge fan of hotdogs over charcoal, but unless I have other plans for said charcoal it seems like a waste for just a few mins of cooking.

I can see the merit of that if you're cooking a ton of hot dogs to feed a crowd.
The preheat in the water especially. Almost like a reverse sear. Bring 'em up to temp, then give them a little char to end. We really don't eat many hot dogs anymore, and really nothing beats cooking them over charcoal imo, so mine mostly get done on the smokey joe.
Oh, and ketchup on a hot dog is a violation!!
Not on par with beans in chili, but a violation nonetheless..
