    Holiday Sausage Preparation

    I have posted about making this sausage before.The difference this time is I used the proper casing, which is a 18-20mm natural sheep casing. Sheep casing is delicate, and is great for other things, like hot dogs and breakfast links. It is also more difficult to use. It always works best with a dedicated stuffer and a 3/8 tube. Quality casings are a must. So is patience and ample time. The result is well worth the effort though. I thought it might be interesting to see just how fine these casings are...And the steps taken to the finished product. Buono Natale!!
