    HomeMade Spam And Polish Kielbasa

    I have been wanting to try my hand at making Spam..So while I was grinding pork butt for the Polish Kielbasa, I ground up some hamsteak as well..Mixed the ground ham with ground pork butt, some sugar, salt and cure #1..Smoked them both at 225 with cherry..Here are the results..

      It all looks great. In high school, central Nebraska, late 60's, spent an overnite at a classmate's. Next day, my folks asked what we had for supper. SPAM. They were shocked. I did not know it even existed. It was clear that they did not hold it in high regard. We had beef and chickens, typically steak at lunch, roast at supper.
      First year college, University of Nebraska-Lincoln, in dorm. At lunch, I finally asked, where is the meat? Only then did I realize that most of my dormies were not used to eating real meat all day!

        Sounds like the Dairy Farm I grew up on. We always had a job and plenty to eat.
