I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Yeah, the lines get blurred though when you try to compartmentalize them, but that’s the closest. A classic Italiano has the tomatoes on top. (Not that I knew that before I started asking. And, my daughter says the tomatoes should be diced more finely.) Like lots of things, it depends on who’s making it. When I started really asking Felipe (my son-in-law), the rules get vague. The answers you get in Santiago are going to be different than the ones you get in Valparaiso. Heck, the answers are going to be different in different parts of Santiago, or even in shops right next to each other! But, think of pizza here in the US. You get one thing in NYC, another in Detroit, another in Chicago… then you go to Old Forge PA and get something completely different, with pre-baked pizza shells and Monterey Jack cheese. They’re all pizza, though.
In the end, I just asked them how they’d order theirs, and asked if things like onions and cheese etc were considered normal variations.

When we were last in Chile, we were in the airport in Santiago (the Arturo Merino Benitez International Airport, I love saying that) and I watched a guy get a completo that I swear was the size of an American football. He looked pretty pleased with it!
