Looks Good! Casings stuffed nice and tight. What sort of sausage were you aiming for?

You're a natural sausage chef. My first attempt at making sausage did not come out looking like yours. Pockets of air, casing not tight and I must have burst the casing a good 10 times.

As stated by Murdy, what type of sausge were you aiming for? Hot links?

Those look good. I am so resisting the urge to jump into this......it looks like one can really go down the rabbit hole of equipment.

I have made some great and not so good sausages. I have not for awhile because I use a Kitchenaid stuffer, and it is a pain. I have heard that other stuffers take the pain out of it, but I would need to see proof of this before I got back into it with new equipment.

One of these, or similar from another reputable company, will definitely be a major improvement over the Kitchen Aide. https://www.lemproducts.com/category/sausage-stuffers

I tried the Kitchen Aid stuffer and went out the same day and bought a Lem stuffer. Been making sausage ever since.

Looking good! I’ve never made sausage like this, but I’ve made breakfast sausage (no casing) a handful of times. One of these days I’ll get around to making proper sausage.
