White bread, yellow mustard, American cheese and don't forget to put the potato chips on top of the cheese. A side of Campbell's soup either tomato or chicken noodle. That was my youth....

I don’t have any in the house. I loved it pan fried on white bread with mayo. I keep saying I want to smoke some but haven’t done it yet. I hear good things about smoked bologna.

I love cooking with wine. Sometimes I put it in my food.
One cannot have too many grills.
A little piece of Chicago Culinary Trivia. As a construction worker for 30+ in Chicago, I learned where all the good diners were depending on the neighborhood.
Many of the old school diners across the whole city and some suburbs all served a dish called the "Cook County". Independently of each other. Basically it would be would be two eggs with fried Bologna, or sometimes a fried Bologna sandwich on white bread with yellow mustard.
Why did they call a dish with fried Bologna the "Cook County"? Because it's sort of an homage to the famous or well "Infamous" Bologna sandwiches served at the Cook County Jail. I guess they wanted some familiarity with some of their customers...lol..
Most of the diners are all gone. The pandemic took a toll. Also as neighborhoods became gentrified, The "Cook County" fell off the menu.
I haven't seen the dish in a long time, but I smile every time I do.
