    Summer sausage cure question

    I have a summer sausage seasoning packet from Butcher Packers, and it calls for 1 oz. of DQ. I have never used DQ before, I always use Instacure #1. The amounts are the same, is it okay to use #1?

    All # 1’s have 6.25% sodium nitrite and 93.75% salt.
    All # 2’s have sodium nitrate in addition to the above ingredients. Sodium nitrate acts as sort of a time-release cure.
    DQ from Butcher Packer comes as either 1 or 2.
    If the recipe calls for #1, any #1 will do. If it calls for a #2 then any number #2 will do. You should not use a #1 if a #2 is called for. However you can use a #2 if #1 is called for.
