I wait until there is a great sale on rib eyes or short ribs and then use them 50/50. This makes the best steak burger I've ever had. I usually grind 15-20 pounds and I only use the meat for burgers. I think I found this mix on this site.
That mix makes some expensive burgers, but I bet they taste great.
Currently at my local grocery, they are both on sale at $5.99/lb, but of course, with bones so it would be more than that. I would normally go get some but I am 10 lb. ahead so...well, maybe I need to go get some. But this mix blows the doors off anything Red Robin has. Every summer we have neighbors over and I cook this into 6-8 oz burgers and people go away still talking about the awesome juicy burgers.
