After we smoke bacon in the PBC (which is often), we slice and package. The odd parts that don't belong anywhere are saved and ground into the burger meat. The end result is an immediate bacon burger, right off the grill. Amazing.
I did this with a buddy's venison shoulder a couple of years ago. Everybody's still talking about the "Mooseburgers"...
