I've got a family get-together coming up and I was thinking of using the steakhouse burger recipe. But my gas grill is too small and my charcoal grill is a green egg.
So, I was going to try slow cooking the burger patties first on my Camp Chef pellet smoker at 225F until the desired internal temp and then searing on a cast iron skillet over the gas flames.
I am with Jgreen, I would smoke on my pellet grill and sear on the gasser or better yet the bge. My standard way of doing reverse sear is pellet grill then charcoal
I reverse sear burgers on my Camp Chef at 225. I cook until about 130 degrees then finish off on my mini charcoal grill to about 165. Turns out great for me. Juiciest well done burger I've ever had.
I reverse sear using the pellet and gasser all the time. My gasser gets HOT. You can really put a sear on. However, I think the CI will get you a better crust, if you want that.
