Choice chuck has plenty of fat if you’re using the ground beef for burgers. But for most of my burger needs I’ve always used Prime brisket from Costco. Typically the cheapest beef available, yet it’s great quality.
Sadly they’ve been out the last couple times I’ve been. Their butcher claims supply chain issues.
