            I guess you could do that with a bunch of rendered tallow. But honestly, I've been using ghee to paint my ribeyes because I felt the beef flavor was a bit strong with tallow. I get fat buildup if I do several burgers in my CS skillet. I could try that, but I certainly don't get enough to float a burger.

              Ok someone has to ask. Is 100 year old grease that good? I’ve heard of it before, but I think I’ll stick to something newer. There is no telling what kinds of polymers have been created in there over time. If I need to deep fry a burger I’ll go with some of this year’s tallow.

                Been there, love their burgers. Went back a second time before we left Memphis, it was that good.

                    I had them a few years ago when I was bar hopping on Beale Street. They were definitely worth it after drinking for a couple of hours. Would love to go back there and have one again...

                      I’m going to go ahead and doubt this. It makes a good story, and no one is interested in calling them on it, so it persists. A quick look at articles on the restaurant: “The legend is….” “According to Dyer’s.…” “As the story is told….” But yeah. They strain it? Of course. That should work. Like the oil and filter in your car, right? Just keep changing the filter, and add oil as needed! No need to change it!

                      I don’t think you need to know organic chemistry to realize that the oil would break down pretty quickly, and become ineffective, and eventually turn rancid. The burgers can still be great without 100 year old grease.

                        I'm sure they are quite healthy too...Low salt...Obviously no cholesterol and low fat...It's all in the pan...Not in your arteries...lol...Dang, they sure look delicious.
