    Smoking in a Dutch oven

    Anyone ever try something like this?

      I'm not sure i understand the directions entirely.....

      But it sounds like I would need 2 cake racks and a pie pan that fit INSIDE my Dutch oven and yet I'm still supposed to have room for meat......

      I'm interested to see your results!

        It sounds like rack pan rack. First rack leaves room for chips. Pan catches drippings. Second rack gets meat up out of the drippings. Wondering if I can fit BBR's if I roll them up and stand on end.

      I do smoke often in Dutch Ovens... couldn't make much kinda sense outta that article, but I'm Rye Cheer to talka bout DO Smokin, if ya would like to have such a conversation.

        Lots of questions. What do you cook, how long can you cook? I assume that it's going to be light smoke given that replenishment is difficult. What's your set up? Probably a lot more.

        NO. WAY. That is really cool. Solves several little problems I've been thinking about. Have you run a probe in there to track temp? What have you tried cooking? Could you do a 6 hour cook if you were willing to replenish coals?

        JCGrill, yes in fact I'm running one food probe in the picture above. I've only done short cooks, in this case chicken thighs. Probably not a good candidate for 6 hours because of the open air design.
