    Maple Syrup Hook Up!

    Got my maple syrup for the year today.

    Went to Weaver Maple Farms this morning for a pancake social. This is also where they collect and make the maple syrup. If one would go to the “Sticks” and then keep going, that is where this place was. 😆

    This place is Amish owned and operated. The two large evaporators they have are wood fired.

    The quart is Grade A Dark. I was informed it was evaporated at a higher temperature for a little longer than normal. It has some caramel undertones and in my opinion it tastes a bit nutty. I plan on using this to make Old Fashioneds.

    The half gallon is Grade A Amber. This is what was being produced today when we were there. It came strait out of the evaporator and the bottle was still warm when I bought it. This is what they were serving with the pancakes. So Delicious. Having syrup straight from the evaporator on pancakes is next level Awesomeness. I plan on using this for pancakes, waffles and French toast throughout the year. Probably should have gotten two.

    The gallon is Grade A Golden. They had samples of this also. This is not as rich tasting as the Amber but is was still quite tasty. It was a bit cheaper than Amber. I plan on using this gallon for cooking. Probably half of it will go to the many batches of Maple Bacon Onion Bourbon Jam I’ll make this year.

      Man there is this stuff called "Rutty Buck Maple Syrup" that is insane. I'd do things a crack head wont for a bottle. Spinaker knows what im talkin' bout...

        I buy my maple syrup at the beginning of March every year and most years it lasts until February. I refrigerate it once it’s opened. If I’d have any left when March came along I’d probably get rid of it. That has never happened. 😆 I always run out.

      It never really goes "bad" but if not refrigerated you might develop some light fuzzy surface mold eventually (many many months later) but you can always scoop it off and if you want can boil it again and it will be good to go. Only happened to me once and I suspect (as did the provider) it was because the container may not have been sterile when it was packed. I buy gallions at least a year in advance of need and keep in the freezer until I need some. Been doing that for 40 years. I suppose there is some point that long enough is long enough but for anything practical it'll last for forever if you just give it a little care.

      That syrup looks good. I love maple syrup. I have found a small family farm in Vermont that I have been buying from for several years. They produce several different types of syrup, from light to dark. I love'm all. They can be found out:
