I am almost too embarrassed to present this as a recipe, but it is very tasty and easy. I don’t use key limes, just regular Persian limes..
One 8 Oz block of softened cream cheese
One 14 Oz can sweetened condensed milk
3/4 cup freshly squeezed lime juice, plus some zest
One tsp vanilla extract
Graham cracker pie crust
Using a mixer—I use a hand mixer—mix it all up until well blended and dump into a store bought graham cracker pie crust.Refrigerate for several hours. Enjoy!

Thank you. We have always used the one on the bottle of Nellie&Joe's Key Lime Juice, but it requires baking because of the eggs, which isn't something I want to do in the summer heat.
