    Help Me Invent Cannoli Waffles

    I believe this should work pretty well as a waffle. Cannoli batter cooked in the waffle maker then sliced in half and filled with the ricotta cheese mixture. Or cannoli waffle topped with mixture. I doubt I could stuff while cooking as that would create a mess.

    it wouldn’t be a cannoli cake but closer to a cannoli skillet recipe. Unfortunately, my search skills cannot quite find the ideal recipe (cannoli skillets are uncommon?) where someone has done this already.

      I probably have the injection things somewhere. I know I have a turkey injector which would work.

        STEbbq ok…. How about this for inspiration: think Pizzelles! But not with anise flavor which is pretty traditional. I would go with vanilla or Marsala or a mixture of both. For the topping, er, filling, use your favorite ricotta filling recipe. I served cannoli with ricotta and wheat berries. So good! I’ll dig up that recipe if you like. it’s for restaurant volume, but I bet you can make it work. And ya gotta use the little mini chocolate chips.

        What a fun project!

          It is on my to-do list. I made German chocolate waffles and hush puppy waffles the last two weeks.

          I am going thinking maybe next Sunday or the week after. I need to get some fresh ricotta cheese from Fresh Market.

        Cannoli waffles have successfully been invented! Mixed in ricotta cheese into the waffle as well as vanilla for SheilaAnn . Used ricotta cheese, vanilla sugar, and cream for the topping and Isome raspberry jam. It was yummy. I made some tweaks to the usual recipe to make it cannoli forward. One of the best yet.

        I'd think a thin, crispy waffle, would be the way to go.

        Something like this.

        The picture shows waffles used for a cannoli. Their website doesn't have a cannoli recipe. So I think they're just using the normal waffle recipe.

        This is the recipe from the instruction manual.
        Waffle Cone Recipe Ingredients
        2/3 cup bread flour
        1/4 teaspoon ground cinnamon
        1/4 teaspoon salt
        2 large eggs
        1/4 cup granulated sugar
        1/4 cup packed dark brown sugar
        1/4 cup unsalted butter, melted
        1/4 cup whole milk
        1 tablespoon vanilla extract
        1. Set Browning Control Dial to halfway between MIN and MAX, close lid and wait until green PREHEAT light comes on.
        2. In a small bowl, combine flour, cinnamon and salt. Set aside. 3. In a medium bowl, whisk together eggs and sugars until well blended, about 1 minute. Add flour mixture and stir until blended. Add butter, milk and vanilla extract and stir until well blended.
        4. Pour 3-4 tablespoons waffle cone batter in center of Waffle Cone Maker. Lower Lid onto batter, do not push down. Cook for 2-3 minutes. Waffle cones are thinner than waffles.
        5. Using tip of Cone Roller, lift edge of waffle and move Cone Roller under cooked waffle to remove. Or use heat-proof, non-metal utensil. Use a paper towel to quickly shape waffle around Cone Roller. Or form around Waffle Cup Mold. Hold until set. Remove cone from Roller and place on a parchment paper-lined tray. Repeat with remaining batter.
        6. When cool, fill with ice cream to serve.
