Will Sous vide to warm up stale donuts bring them back from the “dead”, as it were??

Sounds like too much trouble. Nuke them.

Vacuum packing them would crush them, even then I doubt it would work.

Short answer is “no”. Stale is stale. Still, you might be able to freshen them up a bit in the microwave.

The best thing you can do is nuke them on a low power setting, (2 or 3 out of 10), until they are slightly warm. If they are really stale, it won't bring 'em back 100%, but maybe close.

If the icing starts to melt, you have nuked too long.

haven't tried it but guessing a quick reheat in the toaster oven might work (on bake, not toast). It can save bread/bagels that are a bit stale

Invite your LEAST FAVORITE neighbors over for coffee....................................and donuts. Microwave only if you want.

Best way to make stale donuts better is take them to the donut shop. When you get, say, half way there, throw them out the window and when you get all the way there get new ones. Works every time, no SV required.

Skip the vacuum sealing. Put the donuts directly into the bath. That will moisten them right up. Remove with a strainer bit by bit. Stale donut problem solved.
