Made sea salt chocolates today. Also few small tests on a s’more cookie with my homemade marshmallows in them. Then finished off by taking the rest of the mascarpone and whipping in some heavy cream that I had made into a whip and added a touch of almond extract. Added blueberry & a raspberry touched with a bit of powder.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

I did not follow a recipe, I just tempered some chocolate, stirred in a bit of large sea salt, then started working with it. I did chop up the same amount of chocolate I started with into a pile of small pieces. And as I needed to cool down chocolate between pours, I added a bit in each time to help cool the chocolate, yet only small pieces so it recovered right away, that also kept my chocolate at the capacity I was trying to stay at.

Love the chocolate! And the added touch of the marshmallow and chocolate!
This weekend I went into a chocolate shop in Colorado Springs and had a few truffles and it reminded me I need to make some truffles again. So many different things we make when it comes to food, and truffles, when done right….oh my!
Are truffles on your to do list with this chocolate?

Richard Chrz - simple is best I feel. I did a few variations with the outer shell, but other wise it was simple. Dusted cocoa powder, hard shell chocolate and chopped nuts are what I usually end up doing. I’m all about that truffle center being the star!!
