Love truffles, especially white. We took our honeymoon last year and spent some time in piedmont during truffle season. Every osteria had a plate of white truffles in the middle of the dining room to be shaved on whatever dish your heart desired. One of the highlights was the fassone veal chop - seared but still rare in the middle, only seasoned with sea salt, olive oil and shaved white truffle. The best veal I've had in my life bar none.
FYI if you ever order a fresh truffle dish in a restaurant and they don't shave it at the table, it's bullshit and demand to see it shaved
