Yesterday I made bacon wrapped chicken burnt ends.
I think I finally found a good use for boneless skinless chicken breasts on the Weber.

I first started by cubing up 3 pounds of boneless skinless chicken breasts

I then wrapped up the cubes with 2 pounds of lower sodium bacon

Next I dusted the bacon wrapped cubes on all sides with a BBQ rub I mixed up containing:
1/2 cup dark brown sugar
2 Tablespoons Kosher Salt
4 teaspoons freshly ground black pepper
4 teaspoons paprika
4 teaspoons granulated garlic
4 teaspoons granulated onion
2 teaspoons ground mustard
2 teaspoons cayenne pepper

Doesn’t that look good

I next cooked/smoked them indirectly on my Kettle between 325 and 375 with some cherry wood chunks.

After an hour they looked like this

I next prepared a "Swimming Pool" for them with the following ingredients:
1 bottle Sweet Baby Rays Original
1/2 cup apple cider vinegar
3/4 cup light brown sugar
1 stick of unsalted butter
~2 Tablespoons of honey
Salt and Peppper

Then it was everybody into the pool

After a while the pool turned into a jacuzzi

After about 45 minutes in the pool/jacuzzi it was time to eat.
These were so good.
I gave my neighbor 8 of them. He told me he would try a few then save the rest for lunch today since he already ate dinner. 30 minutes later he texted me to tell me they were all gone.
Both my coworkers needed to know how I made them after I shared some for lunch today.
I will be making these again and again and again.
