    Puerto Rican Style but with half rice and half quinoa mixture.

      I browned the chicken in achiote (annote seeds) flavored oil. it gives the nice color and almost paprika flavor. I seasoned the chicken with Weber's Kickin Chicken, salt pepper and a little ground cloves.

    Did you cook the quinoa and rice together or separately and combine after?

      I mixed them together. Second time eating quinoa. The mixture was excellent with nice texture.

      Yes equal amounts before cooking.

    Interesting! Did one seem to be done before the other? I would have thought the quinoa would be done before the rice was done. I'm assuming you were using white rice?

      Nope...The rice and quinoa finished about the same time. I will try to post the recipe and method. This is one i just kinda made up.
