I'm doing a dry run with a 12lb turkey on my WSM Monday. We have family in town who won't be here Thanksgiving Day. I am going to butterfly the bird and I have read that it will cook faster than a whole bird, but I have not seen how much faster the butterflied version will take. Any ideas?

It's hard to say how much faster it will cook because the size of the bird itself makes a difference. I'd say your best bet is to assume it won't be more than half an hour faster and have a "faux cambro" (a cooler without ice) ready in case it's done too earlyLast edited by _Keith; November 14, 2014, 08:57 AM.

Meathead said he once had a 11 or 12lber take only 60 min. That's probably a rare occurrence. Most times my chickens (4-8lbs) take close to 2 hrs.
