    Butterflied Turkey Question

    I'm doing a dry run with a 12lb turkey on my WSM Monday. We have family in town who won't be here Thanksgiving Day. I am going to butterfly the bird and I have read that it will cook faster than a whole bird, but I have not seen how much faster the butterflied version will take. Any ideas?

    When you split apart a turkey we call it spatchcock. I think that's what you mean. I'd give it 90 minutes.

          It's hard to say how much faster it will cook because the size of the bird itself makes a difference. I'd say your best bet is to assume it won't be more than half an hour faster and have a "faux cambro" (a cooler without ice) ready in case it's done too early

            I just spatchcocked an 11+ pounder yesterday in just over an hour and a half, but I had trouble keeping the temperature up to 325 (Winter is coming).

              Meathead said he once had a 11 or 12lber take only 60 min. That's probably a rare occurrence. Most times my chickens (4-8lbs) take close to 2 hrs.
