    Tonight's smoked chicken

    Along with ribs, and pastrami we smoked a chicken for dinner. My wife did a simple brine with salt, sugar, rosemary, and thyme and soaked the bird for 24 hours. It took 3 1/2 hours to to hit 160 I.T. in the breast. I love smoking chickens. They come out so juicy and tasty. I had to drain the plate it was on when cutting it up from all the juices.
