Injected today, Put in the brine bag. 5% salt brine with 1.25% sugar, dried herbs in the brine as well as garlic, a couple of fresh heads I sliced and a couple tablespoons of chopped/prepared garlic from a jar from Costco.
Injected a quart or so of brine and poked a ton of holes in the skin.
We have 2 14 pounders one to oven roast and one to smoke and fry. Potential bad weather here Wednesday when family is either driving here or flying into Denver. Living in the mountains here their drive up may not be advisable. Plan B is for them to commute up on Thursday and feast on Friday. No matter which way they come they have two passes to go over and long stretches of two lane highways which can be very icey and windy. Better for all to stay safe.
Oh man, that kind of situation can make for some tense holiday travel! Here's hoping the weather cooperates and everyone is able to stay safe and still gather to appreciate family, captainlee!
