Homemade Simon and Garfunkel rub. I just shake on some of each spice from the song:
Parsley, Sage, Rosemary, and Thyme. I do dry brine first.

Simon & Garfunkel, or Herbs de Province are our favorites.

Mike Mill's Magic Dust is good... I use it frequently

My family also really likes when I make White Sauce Chicken ... pretty much just use the recipe and process found in Chris Lilly's book Big Bob Gibsons. White sauce is not something common around where I am from so it is a change of pace. Mostly just oil and season the chicken with salt and pepper then make the white sauce.

It's hard to beat white sauce. It could be a beverage!

Funny thing is I don't like most of the ingredients individually but together they make a good sauce... I've even just dipped crackers or chips in it.

I think I prefer just the All-purpose Rub from The Pit Barrel folks.

Or just some Tony chachere's which is what I put on all the turkeys I cook. I inject my turkeys too a day or two ahead of time.

Jerod, which Tony's? The basic one?

Jerod...is this a heavy-on-the-salt rub? By chance, have you ever used the Traeger Chicken rub? Warp 9 salty that one and I love salt...way too much

Any one ever use Susie Q's Santa Maria seasoning on chicken pieces? This seasoning is not available locally but several deconstructed rub recipes suggest a similar combination:

                4 T Salt, coarse ground
                2 tsp Black pepper ground
                2 tsp Garlic powder
                2 tsp Dried Parsley, minced
                1 tsp Sugar
