I use to raise quail as a hobby. Still had to have all the permits and records as if I had a large quail farm. Multiple any eggs needed in a recipe by 8 if using quail eggs. They are quite good.

My dad caught snapping turtles and collected them until they had enough to cook a supper. A guy that helped my dad out, if there were any eggs, he took them home and ate them, we never did
I will be adding quail to my flock in the next couple of months. Building the cages now and will be ordering the hatching eggs soon. Quail egg's (and meat) are fantastic.
A neighbor raises ducks, sometimes 150 or so at a time. Steady supply of duck eggs. They are harder to crack, and the membrane is tougher, but well worth the effort. They are great in baking, but you might have to adjust the recipe a bit due to the size of the eggs.
A guy near where I used to live raised ducks and sold the eggs. I tried them a few times. They were good. They had a stronger taste than grocery store chicken eggs, but that's not surprising since the ducks were free range. It's been a while, so I can't really recall the flavor well enough to characterize it.
