I was in Wegman’s the other day, picking up some lunch meat for Mrs M, and I saw this:

And I thought, “Sure, why not?” Wegman’s makes their own hoagies (subs) in house, and except their bread is just okay, it’s a decent sandwich. That’s spiced ham, capicola, and thin sliced salami. I picked up a quarter pound of provolone, and a 4 pack of kaiser rolls; I already had (have) tomatoes, onions, lettuce, olive oil, red wine vinegar, oregano, olives for tapenade, etc.. And tonight I made a deli sandwich for dinner, and it was a damn good one.
Now, in that package there are 5 slices of spiced ham, 5 slices of capicola, and 7 slices of thin salami. I used 2, 2, and 3. So what that means is, after I make another deli sandwich, I’ll have a slice of each left. And I’ll have tomato, lettuce, onion, olives, pickled jalapeños, all that other stuff.
So imagine taking those single slices of cold cuts and frying them up crisp, like fried bologna; melting provolone on them; dicing some tomato with some onion, and sautéing that in olive oil and oregano… amirite? I mean, dump that all on to some eggs that have been prepped to be filled, right? Then fold them over. Then top it with finely shredded lettuce, as a garnish, right?
I dunno. The other choice would be to just make an Italian hoagie breakfast sandwich on a Kaiser roll. Like I made for dinner, but less hoagie stuff, and with a fried egg.
Based on the date on the cold cuts, I got 5 days to decide.
