ARGH! Just stop it! I had a waffle iron, and the wife gave it away to charity or sold it at a yard sale, as she didn't like it cluttering up the cabinets for use just 2x per year.....
Seriously - your adventures in waffle making is pretty darned amazing!
I've noticed that when I don't stuff the waffles the center never cooks all the way. This morning I left them in for15 minutes and the center was still doughy. Have you had that problem? I am filling the batter to the line as if I stuffed them.
I will admit I have never had that issue but I also haven’t used pancake or waffle mix. I am mostly using the recipes already shared for regular waffles or at least chocolate chip waffles. My thought is that maybe try the simple KA or Presto classic recipe and see if the same problem happens. Then you know it is the mix.
Leftover mashed potatoes make great waffles. With cheese, bacon, scallions etc. I used to make it after thanksgiving. Can’t remember what recipe I followed…maybe serious eats…?

German chocolate style cake waffles have been invented. The usual waffle recipe with Presto’s chocolate waffle additions (cocoa powder, sugar, vanilla) plus German-style icing with walnuts.
Excellent flavor and definitely kinda fun breakfast.
Cannoli waffles have been invented. A number of tweaks to the usual recipe like including ricotta in the batter as well as more vanilla. Topping is vanilla sugar, ricotta, raspberry jam, and cream. One of the best yet.
