I'd name it Sourly. I saw that in reference to a salami recipe I used once "More sourly!"

I was given a sourdough starter by my neighbor, a 95 year-old wonderful guy. He is my neighbor and we share smoked salmon, oysters and sausages, etc. that we've made. So, this starter is over 100 years old, but I don't know what the H do do with it to keep it going and make some good bread with it to go with the smoked meats I make. Anybody have advice? It's in a jar in the frig.
