Well, this ain't that pretty, but was pretty damn good... sourdough per link below, except with avocado oil instead of olive oil. Cold ferment for 3 days. Two hours at room temp after removal from fridge. Topped with basil pesto from jar (the ugly green stuff), mozzarella, cheddar, pepperoni, ham, olives, and scallions. Cooked in Ooni Koda 16. I really liked the way this dough handled and tasted.

What’s so “neo” about this Neapolitan pizza? It’s all about the flour, baby.

treesmacker thank you, yes, one at a time. I’m building a review in my head, there were a few disappointments. But the wins still stand in the new mixers side. I am fortunate to be well practiced with flour, and my want for flour knowledge is starting to expand, which is a bit scary. Ha.

No mascarpone to be had! So I subbed for cream cheese whipped into the whipping cream with some gelatin. Chocolate sponge cake. Only the frosting on the outside was super sweet and the bourbon cherries!

Sorry to show you up Richard Chrz , but this is what I baked last night.

90% whole wheat sandwich bread with almost 50 g of various seeds in the dough, and pumpkin seeds on top. This is the best ww loaf I have baked. It actually rose enough to crack the crust a little while baking. Knowing that, I will score it next time. The recipe is from The Chain Baker, but I slightly modified it by subbing 10% of the ww flour with bread flour hoping to improve the rise, and it worked. I also added the above mentioned seeds as requested by SWMBO.
