        I cook on a Big Green Egg with a Smobot, so here are my guesses as to what went wrong. Perhaps you started with too large of a fire. Or, maybe you had gusting winds with no windshield in front of the intake. Your ambient gauge is faulty. I had the arm on the top exhaust vent, go out. It was opening and closing randomly.

        I usually inject thin flats with beef broth, and cook both on the Green Egg with the point on an elevated grate.

          A Smobot that doesn't hold temp, the meat turns green, that's too much to overcome for even a pro like you. No one could be expected to make that work. It's when all goes well and the brisket turns out wrong that makes me wonder what happened.
