I cook on a Big Green Egg with a Smobot, so here are my guesses as to what went wrong. Perhaps you started with too large of a fire. Or, maybe you had gusting winds with no windshield in front of the intake. Your ambient gauge is faulty. I had the arm on the top exhaust vent, go out. It was opening and closing randomly.
I usually inject thin flats with beef broth, and cook both on the Green Egg with the point on an elevated grate.
