    Going for med rare on these

    So the temp for pulled is just 160 ? That I didn't know.

    Definitely not probe tender at this point, I must have hit that band of fascia trying to put it in.

    OK still an Immense amount to learn yet.

    BTW the meat from last night tastes even better cold this morning, but still has a couple of tough but thin bands running through it.

    Autocorrect seriously driving me crazy here!!!

      OK it is all finished, very fatty, not super tough nor super tender, about like the last one though it is funny some parts of it are very tender, a few bites here and there.
