Since the last one came out so wonderful, I'm going to try a variation.
Chuck roast, rubbed with taco seasoning. Smoked on the Egg for the day. Finished with roasted poblano or ancho, and garlic. Served in soft taco shells with avocado, lettuce, tomato, crumbly cheese. Maybe radish, I dunno.
Seriously though, I did something similar with a pork butt a few weeks ago, what made it really stand out for me was mixing the seasoning together with a can of chipotle in adobo. Amazing flavor. If you don't like heat, toss the peppers and just use the sauce.
