    Wet Aging before Dry Aging

    It’s been awhile since I have purchased a sub primal but I picked up a strip loin at Costco yesterday. Canada AAA grade which is equivalent to U.S. Choice.

    As it is nicely cryovaced my first thought was to give it a 28 day wet age for tenderness.

    I’m curious if anyone has ever done a dry age AFTER doing a wet age. If so, was the effort noticeable or a complete waste of time.
