    SVQ 28 day dry aged ribeye

    Two hours at 130* F , then 5 minute ice bath, and then seared on my Weber kettle. Notice that it is medium rare throughout. This is my second ribeye SVQ rodeo, and will not ice bath in the future as the steak cools in the middle. Having said that I am convinced SVQ produces better and more consistent results than what I’ve been doing the last 50 years.
