I was at the local butcher a few days back and they had some whole beef tenderloins for $4.99 a pound. I figured something weird was going on and asked them about it. They said they it was inspected but ungraded and they bought 100 cases of it as a "distressed" product. Not sure exactly what distressed means but I took a shot at one. They came frozen in a cryobag so it was kind of hard to really tell what they looked like before I bought it.
I cut 4 2 inch steaks out of the middle and saved the ends which were a bit thin and the side meat. Thinking I will turn those into steak tartare on New Years Day. I was very happy with the marbling on these. I was expecting them to have pretty much no fat in them but that wasn't the case at all. I have seen prime filets worse than these.
A simple reverse sear with a finish on the charcoal chimney.
Got all of them between 120-125. I am not usually a filet or beef tenderloin guy but for $4.99 a pound I was very, very happy with these. I am definitely going to call the butcher and see if he has any more left. Can't wait to try some different things with these.
