    Anniversary Cowboy Cut Ribeyes

    Had our second annual Anniversary cook with the in-laws, brother-in-law and the wives. 31 years! My brother-in-law made these last year and they were probably the best steak I've ever had, so the bar was set pretty high. MONSTER ribeyes, 2" thick, 1 hour on the pit barrel with hickory chips to 120 degrees then seared on my PK grill. Came out perfect medium rare all the way though. Sipped a little rye, bourbon, and wine and had a great meal. 6 of us got through 2 1/2 of the steaks.
