    BBQ_Bill just wanted to chime in and say I used this method for the 3 brisket cook I did about a month ago and wow. Everyone thought it was some of the best brisket they had ever eaten. Thanks for the advice and details. For those that haven't tried this method, it does not disappoint. And to think I almost gave my electric smoker away earlier this year.

        I agree, it’s a great read. There are so many paths to great bbq and so many variations on what we call great. What one group loves another group just calls ok. We’re all seeking the way to what we really like.

          Just saw this. I have smoked many a briskie, and I have an electric cabinet smoker I started with. Never tried a water tray or a couple hour hold in the old electric. I had relegated it to makin bacon but now i have the flat Top. Glad I never let Kim get rid of it.

            On this Easter weekend, I celebrate the resurrection of this old thread. I was not paying much attention to AR in 2019.
            One of the things which I appreciate here is the trove of good advice.
