Gorgeous day in Minnesota. One brisket flat curing for pastrami and corned beef, while the packer went on the smoker last night. A few cocktails on the patio, as little real work as possible... Life's good!
Turned out really good. Probably my best (I struggle with it). Held together, but came apart with just a tug, and wasn't dry. Served with grilled asparagus and just a little creamy horseradish. Had to stop mid-bite and take a pic.
