15 yr. old "Live Aged" Steak

These guys have some interesting videos on YouTube. Ran across this one and now I want to get my hands on a 15 year old "Live Aged" Steak

There is a bit of a trend (very, very small trend) to use older cattle for steaks. There are a few ranches that take old dairy cattle, put them in the pasture for a couple years, and butcher them when they are older. A restaurant in Spain serves old cattle like this and it is some of the best steaks in the world.

I am hoping steaks like this become more readily available. The flavor and texture is supposedly awesome on them.

Certainly sounds interestin...Reckon I'd be more interested if it was grain finished, since I've found I don't care fer th grass fed flavour, so much...

Nonetheless, I'd certainly welcome th side by side comparison test...

I'm finding it very difficult to find older, naturally raised beef online. Carter Country Meats is supposedly the closest, and they never seem to have any for sale. Signed up for their newsletter, and they never send it. their IG page never has anything on their sales, either.

From what I've read, its unlikely Americans would appreciate anything other than the very young cows we're used to. However, I've had a steak from an older cow (can't remember how much older) and I loved it. It's more humane, and I wish we could get behind the efforts.

Many (myself included) would say that the American way of raising cattle IS broken. Inhumane in many cases, and the cattle aren't living how God intended them to live, leading to beef that tastes how it isn't supposed to taste.

Then source locally raised grass fed beef and satisfy your guilty conscience. Still not going to eat old cow.

a little more aggressive than you needed to be, Troutman. Nothing to do with a guilty conscience, and im not telling anyone what or how to do anything. just making a point. nice to see everyone here is so dang friendly when someone goes against their dogmas.

Well all I can say is what a marketing ploy. Buy the time my uncles cows reached that aged they went to the slaughter house for dog food.
