    Texas BBQ juice in the pit?

    So I was thinking, which is always dangerous, while prepping for tomorrow's brisket cook that I wanted to make Texas BBQ juice, and then I was thinking that was going to use a water pan this time (I have a Memphis Grills Pro) and then I had a dangerous idea...

    Could i make the BBQ juice recipe and leave it in the grill while the brisket cooks? It acts as a water pan AND absorbs smoke flavor? Unfortunately I can't put it under the brisket to catch drippings (15.5 lb brisket is going to take up most of my grill).

    Yes, you can. Just don't let it dry out and taste often, it will eventually take on too much smoke.

      Also be wary and check that it doesn’t reduce too much and get too much of a good thing (like too salty)

    I hear ya, kinda wary of th whole "thinkin" thing, my danged self; never has seemed to led me down no good roads, mostly... :P
    Yup, as Tex done said, smoke on, til it's done to yer satisfaction...
