Do you have to trim your Trp-Tips?

    I have only had tri tip from Creekstone Farms. I wait until they put the prime tri tips on sale. Typically, they bundle 3 individually packaged tri tips, at around 3 lbs each, and $70 is the (usual) sale price. I have had to trim each of them, but it is only minor. The amount of fat to cut away is pretty minimal to average, but most of my time is trimming up patches of silver skin. I actually cooked up one this weekend and found myself enjoying the trimming process. I get to continue to improve my knife skills and test out how well I sharpened/honed any of my knives. I didn't measure how much I removed.

    IowaGirl , I'm in the same boat. The closest Costco is 2 hours away. I've got to want to get there to get there, if you know what I mean. Sam's Club is only an hour away, but their meat selection is not as nice as Costco's. There is a great butcher shop about an hour away, which is always a treat to visit.

    I've never trimmed a tri-tip either. Where I buy them, they come all nice and triangularly pretty.

      I always buy trimmed T-Tip. But I also trim it even more. Removing all silver skin and any visible fat.

        I always trim surface fat and silver skin. The extra fat can be rendered down and brushed on the steak while it is cooking. I love the fat on the TRi-Tip because it is so packed with robust beefy flavor!

            Tri-tip is typically sold "trimmed" or "un-trimmed." They are well labeled. Trimmed cuts need very little, if any, trimming - maybe an ounce or two. Un-trimmed tri-tip will often have a full lb or more of fat that needs trimming - and the price usually reflects that by $1-2/lb.

              Well, when I went to tell the butcher at Winco about that large 13 oz fat cap, he didn't tell me that. But I happened to take a picture of the label so i could show him the original weight, and SURE ENOUGH YOU ARE ABSOLUTELY CORRECT. It does say very clearly "UNTRIMMED - FAT ON". Santamarina, thank you for educating me - now if I could just learn to read! ​​

                  Bought one from my local butcher last weekend that has great marbling but the back has a big fat cap. Never seen that before.
