    My brisket pictures of last week.

    Last week was busy with smoking briskets. I kept two briskets a day, some were good, but most flat not that good, still dry even can be tender.

    I would post some good pictures of those good point parts.

    I decided to use 250F next week see if the flat can be more juicer, I never injected before, but I want to prove even without injection can still be good.

              Yes, but not satisfied with the flat. I guess 275 might be a little too high for flat when I separated it with the point and I wrapped too late, although the bark is better.
