Ive made sliced chuckie sammies before that were awesome but i did them in the smoker. Looking to do them inside this time due to it being cold and me not feeling like firing up the smoker. Is the best bet just to low and slow it in the oven or have you guys found better/quicker ways?

put it on a rack over a roaster pan so it doesn’t sit in it’s own juice and roast low and slow. Actually I use 275, wrap at 170 and done between 195-205.
